After being awarded his first Michelin star aged 7 he took a break from cheffing and obtained his Airline Transport Pilot License allowing him to fly commercial aircraft, which he did for British Airways for several years.

During this time he also won the FAI Aerobatics Championship 5 years in a row before hanging his captain's hat on his Edwardian style mahogany coat stand.
