Join Olia Hercules for an evening of spectacular fire-cooked food and good company in a beautiful, relaxed setting.

Olia’s menu celebrates the best of her heritage and lifelong love of Eastern European flavours and techniques, all with a unique Glen Dye twist.

About Olia:

Olia was born in the south of Ukraine and at the age of 12 moved to Cyprus. After moving to the UK to study, she trained at the renowned Leith’s School of Food and Wine and then worked as a chef de partie in various restaurants, including Ottolenghi, and as a recipe developer before landing a book deal.

She is the author of four books: Mamushka, Summer Kitchens, Kaukasis & Home Foods.

In 2022, Olia joined forces with her friend, and Russian chef extraordinaire, Alissa Timoshkina to start #CookforUkraine, a global initiative to raise funds for those affected by the war in Ukraine.

To date the campaign as raised over £1.8million.

Olia is the winner of:

  • Observer Food Monthly’s Special Award for her work on #CookforUkraine
  • Fortnum and Mason Award for best debut cookbook (Mamushka).
  • 50 Best (Champions of Change)
  • Observer’s Rising Star in Food award
  • Included in Vogue UK’s list of most influential women of the year 2022

We’ve worked with Olia for a number of years in Hawarden (North Wales) at our festivals: The Good Life Experience, Camp Good Life, Food & Fire and Summer Camp.
